Vegetable Mandi

                               Vegetable Mandi is a side dish made with a combination of vegetables .It is a speciality in Chettinad cuisine. It is made either with combination of Eggplant,potato,carrot,snow peas,blackeyed beans,beans etc.we can just make a combination of these items but eggplant is a must.... or you need to have okra. They make this dish with only okra too or okra with garbonzo beans.

Ingredients
Eggplant      -1 cup chopped
Potato         - 1 small one chopped
Carrot         - 1 diced
beans          1/4 cup
Blackeyed peas-1/4 cup
onion            -1 chopped
Tomato         -1 medium size chopped
Green chilli    -2-3 slit lengthwise
Tamarind      -1 small gooseberry size [soak in water]
salt   
Rice flour      -1 tsp
oil
 for seasoning
mustard        -1/4 tsp
curry leaves few


     Now take a pan and heat it.Then add oil and when it is heated add mustard and curry leaves.
Then add  onion,green chilli ,tomatoes and saute for few minutes and then add eggplant,potatoes and all the vegetables one by one .
Then add salt and tamarind water and let the vegetables cook in that water.




When it is cooked then add some water to the riceflour and make it like a liquid and add it to the boiling Mandi. This will thicken the dish. Now vegetable Mandi is ready. serve it with rice

{ If we are using okra use the same method after sauting it with little oil to remove the okra's stickiness}
