Vegetable Parotta
For making vegetable parotta we need that Layered parotta or Lachha parotta or that Maharani Parotta what we get from the Indian store.
We call it Kothu Parotta which is very famous in Tamilnadu and sometimes it is called Egg parotta as it has eggs instead of vegetables. Here I am going to make the vegetarian version.

Ingredients
Parotta -5
Mixed vegetables -1cup
[corn,beans,carrot, red and green capsicum]Just make it colorful and flavorful
onion -1 chopped
Tomatoes -2 medium size
Ginger paste -1/2 tsp
Garlic paste -1/2 tsp
Red chilli powder - 1/2 tsp
Coriander powder -1/2 tsp
Garam masala -1/4 tsp
curryleaves -few
Oil -2 tbsps
Fennel seeds - 1 tsp
[sombu]
salt to taste
Coriander leaves cut finely for garnishing
First shred the parotta into pieces either with hand or in the Mixie[just inch it like on and off for few times.It will shred and take care not to powder it] Keep it ready
Now take a pan and heat it .
Add oil and put sombu,[fennel seeds],curryleaves.
After a minute add the onions chopped finely and saute for few minutes till the onions are cooked.
Then add ginger paste,garlic paste, turmeric and saute for few minutes and following that add the tomatoes and vegetables.
Cook for few minutes till the vegetables get done and add the red chilli powder,coriander powder, garam masala to it. Add salt .
Now add the shredded parottas and mix nicely for few minutes. Sprinkle some water to it if needed.
When it is mixed with vegetable and the masala switch off the stove and it is ready
Kids will love it and it is healthy too with lots of vegetables
