Murukku

                                                                Murukku
Murukku or chakli whatever you call it is always Kids favorite snack.
When i started cooking i used to think as a hardest one as we have to get everything perfect. So i never thought of trying ..We always used to buy it and sometime the storebought one  will end up as old stock.
Then i thought i should give it a try. I like the traditional one which my mother in law usually makes  but it is hard to make .Then over the internet i found the combination of cooking the dhals and mixing it with riceflour we can make chakli. But for the perfect combination i had to like we say experimented and finally got the proportion...No more boring sentences let's go to the main recipe

Ingredients
Ratio of Rice flour: Dhals[urad and Moong] is 4:1

Urad dhal        - 1/2 cup
Moong dhal     -1/2 cup
Rice flour        -3 cups
ajwain seeds   -2 tsp(optional)
Sesame seeds-1 tsp(optional)
salt                -1 tsp
Red chillipowder-1 tsp [optional]
Butter/Margarine -5 tbsp(nwe can reduce it to 2tbsp)
oil for deep frying
water as needed

First Cook the dhals in the pressure cooker for 2-3 whistles. We can cook both together with enough water.
Then let it cool and later remove it [if you have excess water in the cooker remove it] and mash it nicely in a mixie by adding little water if needed.
It will be like paste .
In a large bowl mix all the dry ingrdients like the rice flour, ajwain ,sesame seeds, salt, red chilli powder and half of the butter to it.
Then add the paste and make it to thick and stiff but not too tough  . In between mix the remaining butter to it too.
Now the dough is ready. Keep the press[chakli press] and all needed for frying ready too
Heat the kadai with oil and when it is hot slowly press the dough through the chakli press directly in the hot oil.
Fry in medium heat and flip both side and  when the bubbling stops it is done. Take it and check it by pressing it and it will be hard and not soft.
Now delicious chakli /murukku is ready.
Store in the airtight container.
yummy
