                                  Vathal Kuzhambu

Ingredients
Channa dhal       - 1 tbsp.
Urad dhal           - 1 tbsp.
Coriander seeds - 1 tbsp.
Pepper                - 1 tsp
Red chilli           -1
Tamarind           - 1 gooseberry size[ soak in water]
Sesame oil         - 2 tsp
garlic                 - 2 [ finely chopped]
Mustard             - 1 tsp
Fenugreek seeds-1/2 tsp
Fennel seeds      -1/2 tsp
oil                      - 2 tsp
Vathal               - 2 tbsps.[Manathakkali vathal/Sundakkai vathal]
I had manathakkali vathal
 Heat a pan and add  a tsp of oil . When the oil is hot add the channa dhal  and the urad ,coriander seeds,pepper and red chilli and sauté for few minutes till the dhal becomes golden brown.{Take care not to burn it, if it turns black it won't tastes good}
Now grind it with little water .Take the tamarind juice and remove the pulp .
Mix it with the ground mixture and salt.
Fry the vathal in little oil and keep it aside
Heat the kadai and add some oil to it.
Add the seasoning[mustard, fennel, fenugreek seeds.
Add finely chopped garlic and sauté for few minutes till the raw smell goes.
Then add the vathal and tamarind mixed with  masala which we grinded in the mixie.
Add 1/4 cup water to it.
Let it boil and simmer. After a few minutes it will become thick.
Taste it and if you feel the raw taste add little more water and allow to simmer for few more minutes.
Now at the end switch off the stove and add the gingelly oil{ sesame oil} to it.
This last step of adding oil is optional.
Tip:
If you want more spicier add 1/4-1/2 tsp of red chilli powder to it with the masala while it is boiling.
It goes well with hot rice /even Idli/ dosa......very yummy
