And Medhu Vadai is my Favorite

Medhu Vadai / Medhu Vada is just like a spicy version of a donut made out of ground urad dhal and onion , green chilli. It is served with Idli or Pongal with chutney and sambhar in restaurants or you can serve as an evening snack or make it a party delight as sambhar vada or Dahi Vada... Kids will love it

Ingredients
Urad dhal        - 1 cup
Thuvar dhal    - 1tsp[optional]
Rice                - 1 tsp [optional]
onion              - 1/4 cup finely chopped
green chill      - 1 chopped finely
salt                 -1/2 tsp or as needed
oil for deep frying

Soak the urad dhal and the thuvar, rice in water for 2-3 hours[ adding thuvar and rice is optional as it gives a nice taste and color]...
Now grind it in the grinder by draining the water completely.
Add the chilies,  when it is grinding and at the end  add salt
If needed add a little water at a time and grind it to a smooth  consistency
Remove it, add the finely chopped onions, and keep it aside.

To check the dough, take a small bowl of water. Get a small amount like a berry size and drop it in water. If it floats then the dough is fluffy and good. Medhu Vada will be good and perfect.


Take the Kadai and heat  it
 Add the oil for deep frying and let it become hot.
Keep the flame in medium or it will burn the vadai

There are two ways{ many ways but two ways are easy ones for me}

The first one is just get some dough with your wet hands make a hole with your thumb and drop it in oil
When the vadai is golden turn it on the other side and do the same and when it is golden, remove and drain it in a paper towel to remove the excess oil.

The second way is using a ziploc cover  or banana leaf  
Now wet a ziploc cover and have it as a base for making the shape.
Take some dough and put it and shape it and make a hole and then take it and drop it in the oil.
When the vadai is golden turn it on the other side and do the same and when it is golden, remove and drain it in a paper towel to remove the excess oil.
Serve hot with ketchup or coconut chutney.

Tips.
Adding thuvar gives you nice color
Adding the rice helps you to absorb the water..
If you don't want to add the thuvar and rice that will also come good
When the dough become little water as you have added more water accidently  don't worry just add the little rice flour to it and mix it nicely and make the vadais.....
