Keerai Mandi
Keerai Mandi is a simple and tasty chettinad dish with very few ingredients.It retains the green color when the spinach is cooked.It is different from other spinach dishes like keerai saag,and palak paneer...
Ingredients
Spinach - 1 bunch{if using frozen use 1 cup}
onion -1/4 cup
chilli - 1 slit lengthwise{if you want spicy add more}
rice flour - 1tsp
salt
oil - 1tsp
Seasoning
mustard - 1 tsp
urad -1/2 tsp
Now take a pan . Heat it and add oil to it. Then add the seasoning.
Add the onion and chilli to it and saute for 2 minutes.
Then add the spinach and saute for few minutes.
Mix the rice flour with water and dilute it and add this to spinach and add salt and taste it .
Now transfer this to a cooker and cook for one whistle and take it off the heat
Keerai mandi is ready to serve with hot rice/chappati...
