                                Coriander Thokku

                       Thokku is like chutney tat can be used for rice ,roti, idli, dosa and can be stored for few days without being spoiled.
                       It has been a while i kept on trying to get right consistency and right taste of tangy, spicy and tasty. Today it came out so good.
Let's not waste time and go to the recipe.

Coriander          - 2 bunches
salt                    - 1 tsp (as per your taste)
Red chilli          - 4
Urad dhal          -2 tbsp
Channa dhal      - 1 tbsp
Asafoetida        - 1 pinch
Mustard            - 1 tsp
oil                     - 2 tbsps
tamarind           - small gooseberry size


                       Heat a pan . And 1 tsp oil to it and then when it is hot add the urad , channa to it and then fry till it slightly changes the color.
                       Then add the asafoetida, red chilli and tamarind and fry for 1- 2 minutes .
                       Then remove from heat and let it cool down.
                       Meanwhile wash the coriander and cut them and keep aside
                        Now grind the corinder, salt and urad mix but not too smooth.
                       Again heat the pan with the remaining oil and add the mustard to it. As soon as it pops add the ground mixture and keep stirring and take care it doesn't get burnt.
                       When the oil starts to get separated remove from heat and serve with rice / roti/idli/dosa. Yummmmy.
                        Store in a glass container.
