Khatta Dhokla
Khatta Dhokla or the white Dokla whatever we call it is the real dhokla and the other one made with only besan/Channa dhal is called just Kaman. Khaman Dhokla is the yellow one and made with besan which I had given you earlier. Whenever I saw the white one i wanted to try and today I tried it and it turned out pretty good and tasty...nice.So here I am with this recipe an instant Dhokla...
Ingredients
Rice Flour - 1/2 cup
Besan - 1/4 cup
Rava - 3/4 cup
Salt and Sugar as per your taste
Eno - 1 tsp
Curd/yogurt - 1/4 cup
Water - 1 cup
oil - 2 tbsp
ginger paste - 1/4 tsp
Chilli paste -1/8 tsp[optional]
sesame seeds - 1 tsp[ optional]
tadka/Seasoning
Mustard - 1 tsp
Asafoetida - 1 pinch
oil - 2 tbsp
Curry leaves
Garnishing
Coriander -1 tbsp finely chopped
Red chilli powder
In a bowl mix the flour( Rice flour, Besan, Rava).
With that add salt sugar, yogurt ginger, chili.
Mix that by adding water a little at a time and make it lump-free.
Add oil to it.
Now on the stove keep the steamer ready and the Dokla pan with applying oil to it / spray /coat it with oil.
To the mix add the eno and mix it nicely again. You will see the dough will become frothy and lighter.
Add this mix to the pan, top it with sesame seeds, and steam it for 15-20 minutes.
[When you insert a knife in the center and it comes out clean it means it is cooked and ready]
Remove the Dhokla pan and allow it to cool
For seasoning add oil and heat a pan.
Add mustard, Asafoetida, and curry leaves.
Pour this on top of the Dhokla and cut it into pieces and serve with the garnishing of coriander and chilli powder.
