Pineapple Rasam
Rasam is just like a thin soup and it is very light to the stomach . It is usually served in lunch just like sambhar. In SouthIndian lunch we always first serve rice with ghee and paruppu , then rice with sambhar , then rice accompanied with rasam amd then yogurt/buttermilk. Full meal is completed with 2 types of vegetables as sidedish and appalam.
There are different varieties in Rasam.One is Pineapple. I learned this one from my mother in law. I never liked pineapple as such but I loved the pineapple in the rasam.
Pineapple - 1 small cup
Thuvar dhal - 1/4 cup cooked
Rasam powder - 1 tsp
turmeric - 1/4 tsp
Water -2 cups
Tomato - 1/2 chopped
Tamarind -1 blueberry size soaked in water
( we need little of the tamarind water just for little sourness)
salt
Curry leaves
Coriander finely chopped for garnishing
oil - 1 tsp
mustard -1/4 tsp
Now first take the 1/4 cup of cooked dhal and 1/4 cup of pineapple and crush/mash them in the water.
In the microwave lightly cook the remaining pineapple and mix this with the dhal water.
Add little tamarind water to it ,salt, turmeric, rasam powder and mix it well and taste it little bit to check if it needs anything.
Now heat a pan and add oil to it.
Then add the mustard , curry leaves.
Add the Tomato and sauté
Add the rasam water mix which we prepared and let it to boil .
When it starts to boil allow it for a minute and switch off the heat and add the chopped coriander.
Adding the chopped pineapple when it boiling is optional but looks good
