Simple Tomato Chutney

                               Simple Tomato Chutney

                          This chutney is the easiest one and it goes well with anything like sandwich spread , or for dosa/idli/ rice. It is my kids favorite one. We can do either with fresh tomatoes or with tomato paste.

Tomato Paste         - 1 cup( 6-8 oz)
Onion                     - 1 finely chopped
Ginger paste           - 1 tsp
Garlic Paste            - 1/2 tsp
Red chilli powder  - 1/2 tsp ( depends on how spicy you want)
Salt                         - 3/4 tsp
Oil                          - 1 tbsp
Mustard                  - 1 tsp
Curry leaves           - few
Turmeric                - 1/4 tsp

If you are using tomatoes we need 5-6 medium size finely chopped.
Heat a pan and add oil to it.
When hot add the mustard,curry leaves to it.
Then add the chopped onions , ginger , garlic paste , turmeric and salt to it.
Saute till the raw smell goes and then add the tomatoes/ tomato paste and redchilli powder to it and cook for 5- 10 minutes . Keep stirring in the middle as we don't want it burnt.
After few minutes we can see the tomatoes get cooked well and mixed well.
When we see the light layer of oil on the edges it is done . Taste and if we need more salt add the necessary and take it off from the heat.
Serve with Dosa/idli etc . It can be stored in the refridgerator for few days.
