Aappam

                                             Aappam

                        Aappam is a soft in inside and crunchy on outside and usually served with coconut milk as one of the side dish. It is in the shape of the kadai . While making this in the Aappam pan we just pour the dough in the middle and take the pan and rotate it and  make it spread. It is easy and fun to make. Kids like it so much .

Ingredients
Raw rice       - 2 cups
Idli rice        - 2 cups
Urad dhal    - 3/4 -1 cup( we can use either 1 cup or 3/4 cup)
Fenugreekseeds- 1 tsp
salt

While making
Sugar - 1 tsp(optional)
Coconut milk -1/4 cup


Soak the rice together and urad seperately for 3- 4 hours. ( I did for overnight as i easily forget to soak in the morning and so i do soak the previous night )
Grind it to a smooth consistency and add salt .
Mix it and let it ferment for overnight.
Next day add the sugar and coconut milk and mix well .
Adding Sugar is optional . Some mix Coconut milk and if you don't  have it we can add  Milk too.
We can do with out the coconut milk too
Heat the aappam pan and when hot pour a scoop of the dough in the center .
take the pan and rotate it. Close it with the lid and let it.
If you want add half tsp oil to the edges.
When cooked remove and serve hot with sambhar, chutney and coconut milk.

Aappam can be taken when it is still white , but we like it little crisp on the edges.
