Parathas are one of the most versatile Indian flatbreads—sometimes stuffed with flavorful fillings, sometimes layered to flaky perfection. The best part? You can reinvent them every day with different vegetables and a touch of cheese to make them both nutritious and delicious.
Today’s special is a simple yet wholesome Carrot & Cheese Paratha made using regular chapathi dough. It’s quick, healthy, and perfect for lunchboxes or a cozy family meal. I’ve even used carrot poriyal here for an extra boost of flavor and nutrition!
📝 Ingredients
For the Dough
- Wheat flour – 2 cups
- Water – 1½ cups (adjust as needed)
- Salt – 1 tsp
For the Filling
- Carrot – 1 cup, grated (or carrot poriyal for enhanced flavor)
- Cheese – ½ cup (grated)
- Pepper – to taste

Prepare the Dough
In a bowl, combine wheat flour and salt.
Gradually add water and knead into a soft, smooth dough.
Cover and let it rest for 20–30 minutes (or refrigerate if making ahead). -
Roll the Base
Take a portion of dough and roll it into a small circle (like a chapathi). -
Add the Filling
Lightly spread a few drops of oil on the rolled dough.
Place grated carrot (or carrot poriyal), cheese, and sprinkle pepper evenly. -
Shape the Paratha
Bring the edges together to seal the filling.
Gently roll it again into a round paratha. -
Cook
Heat a tawa (pan) and cook the paratha on both sides until golden brown.
Drizzle a little oil or ghee while cooking for extra flavor. -
Serve
Remove from the pan, add a touch of butter on top, and serve hot.

Using leftover carrot poriyal as a filling adds extra flavor and nutrition—making this paratha even more special!
