  • Mustard seeds – ¼ tsp
  • Urad dal – ¼ tsp
  • Curry leaves – a few
  • Green chilli – 1, chopped
  • Salt – to taste

  1. Prepare the Tempering
    Heat oil in a pan. Add mustard seeds and let them splutter.
    Add urad dal and sauté until it turns golden brown.
  2. Sauté the Aromatics
    Add curry leaves, chopped onion, and green chilli.
    Sauté until the onions turn soft and translucent.
  3. Cook the Carrots
    Add the grated carrot and salt. Mix well and cook until the carrots turn tender.
    (Tip: You can microwave the grated carrots for a few minutes to speed up cooking.)
  4. Finish the Dish
    Add the cooked moong dal and grated coconut (if using).
    Mix gently and cook for another minute.
  5. Serve
    Remove from heat and serve warm with hot rice.
