Carrot Poriyal



Carrot        - 3  grated (1 cup)
onion         - 1/4 cup chopped
Split Mung dhal - 1/4 cup (cooked without mashing)
Coconut     - 2 tbsps (grated)( Optional)
oil              - 1 tsp
mustard     - 1/4 tsp
urad           - 1/4 tsp
curry leaves few
Chilli         - 1
salt


Heat a pan.Add oil .
Add the mustard , urad and let urad turn golden .
Add the curry leaves , onion, chilli and saute .
Then add the grated carrot , salt and cook till tender  . ( we can cook the carrot in the microwave to speed the process)
In the end add the mung dhal and coconut . Stir and remove from fire
Serve with hot rice.
