- Carrot – 3 (grated, about 1 cup)

- Split moong dal – ¼ cup (cooked, not mashed)
- Coconut – 2 tbsp, grated (optional)
- Oil – 1 tsp
- Mustard seeds – ¼ tsp
- Urad dal – ¼ tsp
- Curry leaves – a few
- Green chilli – 1, chopped
- Salt – to taste

Prepare the Tempering
Heat oil in a pan. Add mustard seeds and let them splutter.
Add urad dal and sauté until it turns golden brown. -
Sauté the Aromatics
Add curry leaves, chopped onion, and green chilli.
Sauté until the onions turn soft and translucent. -
Cook the Carrots
Add the grated carrot and salt. Mix well and cook until the carrots turn tender.
(Tip: You can microwave the grated carrots for a few minutes to speed up cooking.) -
Finish the Dish
Add the cooked moong dal and grated coconut (if using).
Mix gently and cook for another minute. -
Serve
