                                 Mango Pachadi


                         In Chettinad cuisine or cooking ,I have seen my mom and mother in law cooking  pachadi and it is always made with dhals along with the vegetables in it. The thuvar /channa/mung dhal are not mashed up but cooked perfect without  mashing the dhals. Literally we can see the dhals in it.
It is good side dish with rice/roti/sometimes with dosa too.I feel it is complete with necessary vegetables and dhal in one dish.We can use mango, capsicum,carrot , okra etc.

Mango - 1 full cut into cubes
(Mango is not too sour or not too sweet. It was little sweet and little sour)
Onion   - 1/4 cup chopped
Tomato - 1/2 cup chopped
Sambhar powder - 1/2 tsp
curry leaves few
Thuvar  - 1/4 cup (cooked perfect )Make sure it is not mashed
Turmeric - 1/4 tsp
coriander for garnishing
Salt as per taste
Seasoning
oil       - 1 tsp
mustard - 1/2 tsp
urad      - 1/4 tsp

   Take a pan. Add 1tsp oil to pan and heat it.
When hot add the seasoning of mustard, urad. 
When it starts to pop add the onions, curry leaves and saute for few minutes.
Then add the tomatoes to it with the turmeric , salt and cook for few minutes.
Now add the mango to it.Add the Sambhar powder to it  and let the mango get cooked.
It will take only few minutes. When the mango starts to break you will know the mango is cooked.
Don't mash the mango. 
Now add the cooked thuvar dhal and stir for 1-2 minutes and switch off the stove.
Garnish it with coriander and serve with hot rice/roti.
Delicious Mango Pachadi is ready.
