Mandi is a chettinad special side dish used in lunch with all types of vegetables/okra and water from soaked rice.If you don't have it add 1-2 tsp of riceflour with water .
This Vendakkai Mandi is very tasty and brings you the tangy and spicy flavor.
Vendakkai - chopped one bowl
Onion - 1/4 cup chopped
tomato - 1
Green chilli - 2 ( we can use red chilli too)
Tamarind - small berry size (soak in water)
salt
garlic - 2-3
Rice flour - 1 tsp
curry leaves few
Coriander for garnishing
oil - 1 tsp
mustard - 1/4 tsp
Heat a pan . Add 2tsp oil to it. Then add the okra/Vendakkai. On a slow flame saute it.
This is to remove the stickiness from the okra. While sauting add little salt to it.
This will help to remove the stickiness.
Then remove it and keep it aside.
Take a pan . Heat and add 1 tsp oil to it. When Hot add the mustard, curryleaves to it
It pops and then add the onion and saute ,Then the garlic, chilli and tomato.
Add the turmeric,salt too
Stir for few minutes till the raw smell goes and then add the vendakkai/okra.
Then add the tamarind water got from the soaked tamarind.
Add the rice water/rice flour mixed with water.
Let it cook. It will little thicken the gravy and make sure it doesn't get burnt or sticked to the pan by stirring it when needed.
After few minutes taste it little to find out if it is cooked enough.
Then remove from fire and garnish with coriander and serve .
