Poosanikkai Kootu
White Pumpkin Kootu
Call it white Pumpkin or Poosanikkai belongs to the Squash family. When we make Sambhar , kootu it is a wonderul side dish and a healthier one too.
It needs only a few ingredients to prepare this kootu and Sambhar.
Poosanikkai - 1 cup
Channa Dhal - 1/4 cup
Curry Leaves few
salt
To Grind
Coconut - 2 tbsps
Chilli - 1
Bengal Gram Dhal- 1 tbsp ( Pottukadalai)
Cumin - 1/2 tsp
To Seasoning
Urad dhal - 1/2 tsp
Cumin - 1/4 tsp
First grind the coconut, chili, Bengal gram dhal, and cumin and keep them aside.
Now cook the white pumpkin, channa dhal, in a cooker for 2 whistles together or you can cook them separately and keep it ready.
Now heat a pan. Add 1 tsp oil. When it is hot add the seasoning and curryleaves. Then add the cooked pumpkin and Cooked Channadhal to it.
Next step add the ground coconut mix to it.
After two minutes add the salt and mix well and take off from the stove.
Poosanikkai Kootu is ready to serve with hot rice / Roti.
{Tips you can substitute Pottukkadalai with 1 tbsp of channa dhal. If you are using channa dhal for grinding just dry roast it on the pan till it is golden and substitute for pottukadalai }
