Vegetable Parotta (Version 2)

                                   Vegetable Parotta

This Vegetable parotta is just like Egg Kothu Parotta with vegetarian version. It is  very easy to make and we have a convenience to add more vegetable or less vegetables.
It tastes very good.


Beans     - 1/4 cup chopped and cooked.
Carrot    - 1/4 cup   chopped and cooked
Cauliflower - 1/4 cup chopped and cooked
Capsicum - 1/4 cup chopped.
Onion       - 1/4 cup chopped
ginger paste - 1/2 tsp
garlic paste  - 1/2 tsp
tomato paste- 2 tbsp
Pav Bhaji powder - 1 tsp ( we can use chilly powder or any curry powder)
Coriander powder - 1/2 tsp
turmeric powder - 1/2 tsp
oil                - 2 tsp
Parotta  - 5-6 cooked and shredded or chopped.
Fennel seeds - 1 tsp
Coriander - few chopped finely

First cook the onion , ginger, garlic paste in microwave and grind it to a paste and keep it aside.
Then when you have everything ready heat a wok or  a pan .
Add oil to it and add the fennel seeds.
Then add the ground onion paste, and saute for a minute.
Now add the vegetables   , tomato paste and saute and mix well.
Add the dry powder too ( pav bhaji powder, coriander powder).
After that step add the parotta and mix well . If needed add salt too for the vegetables and add 2-3 tablespoons of water (just sprinkle)
Saute and mix for few minutes and remove from heat and garnish with coriander leaves.
Yumm yummm Vegetable Parotta is ready
