Ingrdients
Quinoa - 1 cup
lemon rice powder - 1 tsp
lemon juice - 2 tsp ( optional)
Mustard- 1tsp

Cook the tricolor quinoa as directed
Take cooked quinoa 1 cup
Heat a pan . Add oil to it . Then add the seasoning of mustard , channa dhal, urad, cashews,curry leaves , green chilli.
Then add the vegetables ( I added red and green bell pepper)
Then add the lemon rice powder 1 tsp.
After that add the Quinoa and mix well by adding salt as needed for 2-3 minutes .
Remove from the stove and add 2 tsp of lemon juice ( Optional )
Serve with Parsley chutney/ Parsley thuvaiyal and chips / vathal
{This is completely optional. I added raisins , red pepper , Cashews }
