Baby Potato Masala Roast

                           When you get small tiny baby potatoes try this recipe ,i am sure you will love it. Call it spicy Baby Potato Roast or Baby Potato Masala Roast or Baby Potato Stir Fry ,it goes well with anything.


Ingredients
Baby Potatoes - 8-10
Onion              -1 sliced lengthwise
Tomatoes        - 1 chopped
Ginger Paste   - 1 tsp
Garlic              - 2-3 cloves sliced lengthwise
Curry leaves    - few
Curry Powder  - 1 tsp
Turmeric          - 1/4 tsp
Chilli Powder   - 1/2 tsp
mustard            - 1 tsp
cumin               - 1/2 tsp
Fennel seeds     -1/2 tsp
oil                      -1 tbsp
salt to taste
Coriander- chopped to garnish

    Take a Instant Pot and pressure cook the Whole Potatoes in the Vegetable setting for 5 minutes. keep it aside.
     Take a pan. Heat it and add 1 tbsp of Oil to it.
    Then add the mustard, cumin, fennel seeds . Next add the onions and saute it for 2-3 minutes till it becomes translucent.
In the next step add the ginger paste , garlic and saute for a minute . Now add the tomatoes and the curry powder, chilli powder, turmeric , salt to it and saute it for few minutes .
Then add the cooked potatoes and cook it till the masala  blends in and make sure cook in a low flame
This helps potatoes to absorb the spice and doesn't mash up.It will take 6-7 minutes and then add the curry leaves and switch off the flames.
Yummy  Baby Potato Masala Roast or Baby potato stir fry or subzi is ready to serve
Serve with Roti/Naan or steamed rice.
