Baby Potato Masala Roast (Spicy Potato Stir-Fry) 🥔✨

Ingredients
- Baby Potatoes – 8 to 10
- Onion – 1, sliced lengthwise
- Tomato – 1, chopped
- Ginger Paste – 1 tsp
- Garlic – 2 to 3 cloves, sliced lengthwise
- Curry Leaves – a few
- Curry Powder – 1 tsp
- Turmeric Powder – ¼ tsp
- Chilli Powder – ½ tsp
- Mustard Seeds – 1 tsp
- Cumin Seeds – ½ tsp
- Fennel Seeds – ½ tsp
- Oil – 1 tbsp
- Salt – to taste
- Fresh Coriander – chopped, for garnish
Method
- Wash the baby potatoes thoroughly and gently poke each potato 2–3 times with a fork. Place them in the Instant Pot with enough water for pressure cooking.
- Pressure cook on the Vegetable setting on medium for 5 minutes. Allow the pressure to release naturally, then remove and set aside.
- Heat a pan over medium heat and add the oil.
- Add the mustard seeds, cumin seeds, and fennel seeds. Let them splutter.
- Add the sliced onions and sauté for 2–3 minutes until they become soft and translucent.
- Stir in the ginger paste and sliced garlic. Sauté for about a minute until fragrant.
- Add the chopped tomatoes, curry powder, chilli powder, turmeric powder, and salt. Cook for a few minutes until the tomatoes soften and the spices blend well.
- Add the cooked baby potatoes and gently mix until they are well coated with the masala.
- Reduce the heat to low and cook for 10–12 minutes, stirring occasionally. This allows the potatoes to absorb the flavors without breaking apart.
- Add the curry leaves and mix gently.
- Turn off the heat and garnish with freshly chopped coriander.
