Vegetarian Chili in Instant pot



         Today we are going to share a recipe that is different from Indian cooking and here in United States it is mostly cooked with meat. But what we are doing here is fully vegetarian  and they have the vegetarian version. I don't think they use much of the vegetables in it and they use beans. In my version we are going to include vegetables too and make it as a wholesome nutritious๐Ÿ˜‹๐Ÿ˜‰๐Ÿ˜‹.Another thing is that we are are going to make it in our INSTANT POT.๐Ÿ˜‰๐Ÿ˜Š
                 Shall we move onto the recipe.One more thing is NO NEED TO SOAK THE BEANS as we are using the INSTANT POT


Ingredients
Olive Oil                          -3 tsp 
Onion                                - 1 medium diced
Garlic                                - 3 cloves nicely chopped
Tomato                              - 14.5 oz can
(or use 3-4 medium tomatoes chopped  measuring 1.5 cups approximately)
Pinto beans(dry)               -1 cup
Brown lentils                     -3/4 cup
Zuchinni                             - 1 diced
Carrot                                 - 1 diced
Bell Pepper red/green        - 1 diced
Cumin powder                    -1 tsp
Masala powder/chilli powder -1 &1/2 tsp
{Masala powder i used is a mix of chilli,coriander,garam masala etc
I will post it seperately}
water                                  -4 cups
salt                                     - 1-2 tsps depending on your taste
Black pepper crushed optional

Toppings(use any as you like)
Avocado
Cheese
Sour cream
Chopped  Coriander/Cilantro
red onions finely chopped
tortilla chips/croutons

Now after everything is ready get the INSTANT POT and plug it in

Put it in a saute mode with selecting vegetables in that mode
Then it will start to heat . Now add the oil to it.
Add the onion and garlic first and saute it.
After 2-3 minutes add the vegetables ( carrot, zucchinni , bell pepper )and saute for few more minutes.
Now add the beans ( pinto and brown lentils) and saute it. Add the masala powder/chilli powder, cumin powder , salt.
After few minutes sauteing add the tomatoes and saute it few more minutes so that it gets mixed well.
Add 4 cups of water and close the lid . Cancel the saute mode and switch to Pressure mode with beans and temperature high and time 30-34 minutes.
After it is done we can hear the timer and off it or switch to keep warm.
Whenever you are ready slowly release the pressure and your Vegetarian Chili is ready to serve with your bread and favorite toppings .YUMMY
