Chettinad Milagu Sadha Podi

 

This Podi is from our Chettinad too. We specially use it on hot rice mixed with ghee. It is very simple to make and requires very few ingredients. Many people use Black pepper in it. My version is without Black Pepper and we add Mor Milagai{ which is just  green chillies soaked in buttermilk and dried. } I feel the Mor Milagai is the key ingredient and blak pepper is optional for me.

Ingredients

Urad dhal - 2 cups

Mor Milagai - 2

salt - 1 tsp

Black Pepper - 1 tsp optional

Heat a pan and keep the flame in medium.

Add the urad dhal, Mor Milagai and roast it . No need to add oil. Keep on stirring so that it doesn't get burnt.Don't brown it . We have to roast it till the raw smell goes and the urad is roasted

Add salt.

When you touch the Mor Milagai it will also be crispy now .

Switch it off and cool it.

Grind to a smooth texture. 

Chettinad Milagu Sadha Podi is ready.

Store it in air tight container.

Serve it with hot rice and ghee...mmmmm delicious.
