Cow Peas Masala / Pinkeye purple hull Peas Masala

  Today's recipe  is also another vegetable from our garden . Grown organic and a different variety of cow peas. It is Pinkeye purple hull peas . It is easy to grow and delicious when cooked obviously as it is from our garden πŸ˜„ . Another recipe From Garden to Table πŸ˜‹πŸ˜‹


The recipe is easy to make. 
Cow Peas(Pinkeye purple hull peas)- 1 cup
onion - 1/2 cup chopped
tomato - 1 chopped
ginger paste - 1/2 tsp
garlic - 2 clove chopped
salt
curry masala powder- 1 tsp
Turmeric- 1/4 tsp
Mustard - 1/2 tsp
Oil - 1-2 tsp

Heat a pan . Add oil to it. When hot add the mustard.
It pops , add the onion, sautΓ© for few seconds , then add the ginger, garlic.
Again stir it  and add the tomatoes followed by slat, curry masala powder , turmeric.
Mix it , then add the Cow peas and add little water to cook and close the lid . 
It will cook fast. Around 5- 10 minutes let it cook.
When it is cooked  , garnish with chopped coriander .Your CowPeas Masala is ready to serve with rice/roti
