Kovakkai Masala



Kovakkai - 1 bowl (chopped lengthwise)

onion - 1/4 cup chopped

tomato - 1 chopped

garlic - 2 sliced lengthwise

ginger paste - 1/2 tsp

turmeric- 1/4 tsp

salt - 1/2 tsp

curry powder - 1 tsp

curry leaves

coriander to garnish

oil - 2 tsp

mustard - 1/2 tsp

water - 2-3 tbsps


Heat a Pan. Add oil to it .

When hot add the mustard. It will start to pop. Then add the onion, ginger paste, garlic one after another continuously sautéing.

Then add the tomatoes, , curry leaves ,salt. After 2-3 minute sautéing add the chopped Kovakkai/Tindora/ Ivygourd to it.

Stir it, add the curry powder , turmeric and mix it again. Add 2-3 tbsp water and mix. Close the lid and put it into medium flame and allow to cook.

It will take anytime between 5-10 minutes to be done (make sure to check, stir in between to avoid burning the vegetable)

( if it is not cooked after 10 minutes add little more water and cook for few more minutes)

After 5-10 minutes the Kovakkai Masala is ready .

Garnish with coriander . Serve with Hot Rice /Roti.😋😋😋
