This Bajji is easy and it is wonderful snack with Tea especially when it is raining.
Little prep of the Bajji flour and store it , so that you don't have to buy it in store. When we make the Bajji we can mix this flour with the chilli powder, turmeric , and salt ,adjusting how spicy you need .
Bajji Flour
Gram flour/ Besan - 1 cup
Rice flour - 1/2 cup
corn flour- 1 tbsp( optional)
Mix this and store it in air tight container
Now to the recipe
Bajji Flour - 1/2 cup
red chilli powder - 1/2- 1 tsp
turmeric - 1/4 tsp
salt to taste
eno - 1/2 tsp ( optional)
{Adding Eno is optional but I use it as it makes the Bajji little crunchy }
Pudalangai- chop into thin circles( after removing the seeds)
I cook the pudalangai for a minute with out water. This step is not needed but i do this way.
Mixing the Bajji Mix
In a bowl , take the bajji flour , salt , turmeric, chilli powder and add water little by litte.
Mix it nicely without lumps. The consistent should be of a pancake dough consistency. When you dip the pudalangai ring , it has to coat it.( it has to be in a onion ring batter consistency)
Add eno and it will become little fluffy.
Now the bajji mix is ready.
Heat a Kadai and add oil for deep frying
When the oil is hot, dip the pudalangai/snake gourd slices one after another in the dough and fry it in the hot oil. It is just like the onion ring
Strain the oil/when fried to crispy /golden brown .
Yummy delicious mouth watering Pudalangai bajji is ready
Serve it with Evening Tea or with Tomato Ketchup .
