Peerkanghai Kootu

 Peerkanghai is Ridge Gourd in English. It has lot of vitamins and antioxidants. In short healthy vegetable to include in our diet.

Peerkanghai - 1 bowl ( remove the skin and chopped)

onion - 1/4 cup

split Moong dhal - 1/4 cup

salt to taste( around 1/4 tsp)

oil - 1 tsp

cumin- 1/2 tsp

urad dhal - 1/4 tsp

curry leaves

rice flour - 1/2 tsp (optional)

green/red chilli- 1

coconut - ground paste 1 tsp( optional)

Take a Pan and add the onion, Peerkanghai, split moong, cumin, 1/4 cup water

Close the lid and heat it on a medium flame and cook it till the vegetables are cooked.

Then switch it off . Keep it aside.

Take a Pan. Heat it and add oil to it. When it is hot add urad, curry leaves, chili, and saute it till urad is golden brown. Now add the cooked Peerkanghai, salt ,  as needed and the coconut paste

If you feel the kootu is watery add the rice flour mixed with little water to make it thick. This step is completely optional 

After you added the coconut paste and when it start to boil switch of the stove and transfer to a serving bowl. 

Serve with Hot Rice, Rasam and spicy Masala. Yummy😋😋😋
