Pudalangai/ Snake gourd is a rich source of dietary fibers that help in digestion. It has significant amounts of Vitamin C and E and antioxidants.
This recipe is easy to make and simple one that goes with hot rice, sambhar, rasam.
Pudalangai/Snake gourd- 1 medium sized chopped
onion- 1/4 chopped
chili- 1 slit lengthwise
turmeric - 1/8 tsp
split moong - 4 tbsp cooked perfectly
Coconut - grated 3 tbsp
oil- 2 tsp
urad- 1/2 tsp
cumin- 1/2 tsp
curry leaves few
First chop the Snakegourd
{if it doesn't have thick skin you don't have to remove the skin. Just wash it nicely and cut it lengthwise ,remove the seeds and chop it to the desired size. }
Cook the Pudalangai/Snakegourd with onion in a cooker by adding water till the vegetables are covered for 1-2 whistles{I did for 2 whistles}
After the pressure is released strain the water and keep it aside
Take a Pan. Heat it and add the oil.
When oil is hot add the seasoning ( urad, cumin) . It will start to turn golden brown. Now add the curry leaves, chilli. Sauté it. Then add the cooked Snake gourd. Stir it for few minutes and add salt , turmeric.
Mix it
After few minutes add the cooked dhal and mix it. Keep mixing/stirring in between for a minute.
Then add the grated coconut and mix well. Then switch it off.
Transfer it to a serving bowl and serve with hot rice, sambhar, rasam.
