Pumpkin Halwa

 

          Halwa is a desert popular in Indian cuisine, Asian and middle Eastern cuisines. It is either made with flour/semolina/ fruits/ vegetables as main ingredient along with Sugar  , ghee and garnished with nuts, raisins. It is so rich and delicious. 

          Today I tried and made Halwa with Pumpkin. While I was starting I wasn't sure how it is going to turn out but the result was awesome delicious. I had to use only few ingredients and very little ghee

Ingredients

Pumpkin - 2 cup shredded ( remove the skin and shredded)

Brown Sugar -  1cup ( We can use regular sugar too)

Elaichi/ cardomom- 1

Cashew - few

Raisins - few

Ghee - 2 tbsp 

First take a pan . Heat it and add ghee

When it is hot add the cashews and fry it till it is golden brown 

Remove it and keep it aside. Repeat the same step with raisin too

Now after removing raisin /cashews add the shredded pumpkin and the sugar. 

Cook till the pumpkin is cooked nicely and keep stirring to prevent from burning.

It won't take much time. In few minutes it will be cooked and it won't stick to the pan.

Add the cardamom , the roasted cashews and raisins to it. If needed add 1 more tsp of ghee to it too.

Mix for another 1-2 minutes and take off the stove. 

Delicious Pumpkin Halwa is ready

Serve hot or cold . Yummy 😋😋😋😋
