Okra Masala with Peanuts/ Vendaikkai Masala with Peanuts

  This Okra recipe is simple and delicious with the crunch of Peanuts. It goes well with Rice as a subzi/side dish or Roti as Subzi. Easy to make. Okras are homegrown and organic. From Garden to TableπŸ˜‰πŸ˜‰πŸ˜‰. With a little preparation, we can make it in a jiffy.

Ingredients

Okra - 1 & 1/2 cups

onion - 1 medium chopped

tomato - 1 chopped

ginger paste = 1/2 tsp

garlic- 2-3 chopped

curry leaves- few

Roasted Peanut- 1/4 cup ( crush it coarsely)

turmeric- 1/4 tsp

curry powder- 3/4 tsp

coriander powder - 1/2 tsp

oil - 3tsp

mustard - 1/2 tsp

cumin - 1/2 tsp

asafoetida - 1 pinch

 Wash the Okra and chop it

Heat a pan and add a teaspoon of oil. Saute it by keeping on mixing it till the stickiness is gone.

We can add little salt so that it speeds up the process.

Remove it and keep it aside.

Heat a pan and keep the flame medium.

Add another 2 tsp of oil. When hot add the mustard, cumin, and asafoetida.

When the mustard pops, add the onion and stir it.

Then add the ginger paste and chopped garlic and saute it for a minute

Add the tomatoes. Mix it. Add the turmeric, curry powder, and coriander powder and mix it

Saute for a few minutes till the tomatoes are mostly cooked. Then add the okra which we had kept aside.

Add salt if needed and add the curry leaves. Mix it

Now add the crushed peanuts, mix them and switch off the stove.

Now Cruchy Okra Masala is ready
