Dhokla with Rice ,Urad, Channa, Moong Dhal

 

This recipe is another type of Dhokla where we soak the Rice and pulses for 4 hours, grind it  and then either ferment it or make Dhokla without fermenting it

When you are doing it without fermenting, we need to add yogurt

This can be served as a snack too and we can serve it with Green Chutney

With the following measurement, we can make Dhokla twice

Rice - 1/2 cup

Moong dhal- 1/2 cup

Urad dhal - 1/2 cup

channa dhal - 1/2 cup

ginger paste - 1 tsp {I used 1/2 tsp for one plate of Dhokla}

chilli paste as needed

salt - 1 tsp

Eno - 1 tsp 

coriander for garnishing

yogurt - 2 tbsp

Seasoning

oil- 2tsp

mustard -  1 tsp

sesame seeds - 1/2 tsp {optional}


Wash and Soak the rice, urad, channa, and moong for 3-4 hours.

Grind it to a consistency that is not smooth, just a tiny bit of coarse.

While grinding add the ginger paste, salt, and yogurt too

{ I am adding yogurt because I am not going to ferment}

After grinding take it and separate it into 2 bowls.

Now take one bowl (around 3/4 -1 cup) of the dough, add the chilli paste (according to the spice level you like) and mix

Now add the Eno -1 tsp and mix. You will see the dough will become frothy and lighter. { Here I used orange flavor Eno as I didn't have regular Eno}{ we can use any Eno as it is just a fruit salt} {Fruit salt is commonly marketed under the brand name Eno. It has a similar effect to baking powder and is used as a leavening agent in several recipes in this book. Dhokla, a lentil cake, and idli batter use fruit salt to make a lighter and fluffier batter.}

Now on the stove keep the steamer ready and the Dokla pan with applying oil to it / spray /coat it with oil.

Add/Pour the mix to the plate, and steam it for 15-20 minutes.
[When you insert a knife in the center and it comes out clean it means it is cooked and ready]
Remove the Dhokla pan and allow it to cool

For seasoning 

Add oil and heat it

Add the mustard, sesame seeds(optional)chopped green chilli (optional), and curry leaves(optional). When it pops switch off the stove and pour it on top of the Dhokla, add the coriander  and slice it

Serve this delicious Dhokla with green chutney and enjoy
