Harvest Fresh Unripe Fig Poriyal: A Delight with Split Moong
Green figs are unripe, immature, and small figs that are usually green. As they ripen, some varieties, such as Brown Turkey, Chicago Hardy, Celeste, and LSU Purple, change from green to brown or purple.
Young, immature, and unripe figs tend to be small and green in hue. For varieties like Brown Turkey, Chicago Hardy, Celeste, and LSU Purple, the color will change from green to brown or purple as the fruit ripens.

Okay,let's go to the recipe which is very simple and healthy
Fig - 1 cup { harvested from trees and washed}
oil- 4 tsp
salt - to taste { approximately 1/4 tsp }
mustard - 1/2 tsp
asafoetida - 1 pinch
onion - 1/4 cup chopped
Green chilli - 2 slit lengthwise
Split moong - 3 tbsp { cooked but not mashed}
First wash the figs and cut into halves/quarters
Keep everything readt
Take a Pan and heat it. The flame should be medium
Now add 2 tsp oil to it and when it is hot add the chopped figs and saute it till it is tender. It would take around 4-5 minutes
Remove it and keep it aside.
Take another pan and heat it by adding 2tsp of oil
Then when hot add the mustard, asafoetida. After it pops, add the onion, and green chili and saute it for a minute or 2.
Now add the chopped figs
Mix and if it needs more salt
After 2-3 minutes of sauteing, add the cooked split moong
Mix for a minute and switch it off
