Green Tomato Pachadi
This delightful pachadi, made with fresh tomatoes from the garden, is slightly sweet, a little sour, and spicy with red chili powder. It pairs wonderfully with rice, roti, idli, or dosa. You can use only green tomatoes or a mix of green and red tomatoes for this recipe.
Ingredients:
- Green tomatoes: 1 cup
- Red tomatoes: 1/4 cup (optional)
- Onion: 1/4 cup, chopped
- Ginger paste: 1 tsp
- Garlic paste: 1/2 tsp
- Turmeric powder: 1/4 tsp
- Red chili powder: 1/2 tsp (adjust to taste)
- Salt: to taste
- Mashed cooked thuvar dhal: 1 tbsp (optional)
- Coriander: for garnish
Seasoning:
- Mustard seeds: 1/2 tsp
- Asafoetida - a pinch
- Curry leaves: a few
Instructions:
- Heat a pan and add 2 tsp of oil.
- Add mustard seeds, asafoetida and let them splutter.
- Add chopped onion and curry leaves. Sauté until onions are translucent.
- Add ginger and garlic paste. Stir for a few minutes.
- Add turmeric powder and salt. Continue to stir until the raw smell of the onion disappears.
- Add green and red tomatoes. Stir well for a few minutes.
- Add red chili powder and mix well.
- Cook until the tomatoes are completely mashed. Add a little water if necessary, but avoid making the dish too watery.
- Once the tomatoes are well-cooked, add the mashed thuvar dhal and mix well.
- Garnish with chopped coriander and turn off the stove.
Serve with: Rice, roti, idli, or dosa.
