This recipe is made with left over chapati/Roti and its like Vegetable Parotta .Easy to make and we can use it as a Lunch Box Recipe for the Kids as they are filled with veggies and colorful, of course healthy😃😃
Roti/Chapathi -6-8
Mixed vegetables -1cup
[corn, beans, carrot, green peas, red and green capsicum]Just make it colorful and flavorful
onion -1 chopped
Tomatoes -2 medium size
Ginger paste -1/2 tsp
Garlic - 2 chopped
Curry powder - 1 tsp
curryleaves -few
Oil -2 tbsps
Fennel seeds - 1 tsp( optional)
[sombu]
Cumin - 1 tsp
salt to taste
Coriander leaves cut finely for garnishing
Cut the Roti in desired shape either into small squares or triangles.
Heat a Pan.
Add oil. When hot add the cumin , followed by curry leaves onion , ginger paste, garlic , tomatoes and vegetables.
Add the curry powder, salt.
Cook the vegetables for few minutes and then add the cut chapathi
Mix it and if it is dry sprinkle little water.
Mix and allow to absorb the flavor and cook for few minutes in it.
Then garnish with coriander. Mix and switch off the stove.
Transfer it in the serving bowl .
Serve just like that or accompanied with Raita.
Delicious simple Lunch is Ready.
