Garden-Fresh Rosemary Garlic Roasted Potatoes (Air Fryer)

Crispy on the outside, tender on the inside — these rosemary garlic roasted potatoes are a breeze to make and bursting with flavor. With fresh herbs straight from our garden and a hint of garlic, they make the perfect side dish for any meal. Using the air fryer makes them not only quick but also healthier with less oil. Whether you're serving them for a weekend brunch or a cozy dinner, these golden bites of goodness will steal the show!
Ingredients:

Russet potatoes – 5 to 6 (peeled, washed, and chopped into big cubes)

Salt – 1 tsp or to taste

Fresh rosemary – 1½ tbsp (chopped and lightly crushed)

Fresh oregano – 1 tbsp (chopped and lightly crushed)

Garlic – 4 to 5 cloves (peeled, chopped, and crushed)

Olive oil – 2 to 3 tbsp

Black pepper – ½ tsp (adjust to taste)
Instructions:

Prep the Ingredients:
Peel and cube the potatoes. Rinse well and set aside.
Peel the garlic, then chop and crush using a mortar and pestle. Do the same with fresh rosemary and oregano to release their aroma. -
Mix it All Together:
In a large bowl, combine the potatoes with the crushed garlic, herbs, salt, pepper, and olive oil. Toss until evenly coated. -
Air Fry:
Lightly grease the inside of the air fryer basket with a bit of oil. Add the seasoned potatoes and spread them out evenly.
Set the air fryer to 400°F for 20–25 minutes. Halfway through, carefully open the basket and give the potatoes a gentle mix for even roasting. -
Serve:
Once golden and crisp, remove from the air fryer and serve hot. These roasted potatoes pair wonderfully with grilled dishes, salads, or even on their own with a dip.
