Sambhar

                                                                 Sambhar
                                 Basically Sambhar is kind of vegetable stew, a mix of pulses[pigeon peas], vegetables,tamarind. It can be used as a sidedish for Idli, Dosa,Rice,Pongal ,etc. It is very easy to make.

Ingredients
Thuvar Dhal  -1 cup
Vegetable     -1 cup
[drumstick,squash,mango,carrot,beans,radish]
Onion          -1/4 cup chopped
Tomato       -2
Tamarind     -small gooseberry size
Oil              - 1-2 tsps
Salt
Sambhar powder-1 tsp

Seasoning
Mustard   -1/4 tsp
Hing         - little [Opt]
Curryleaves    few

Cook the Thuvar dhal [Pigeon peas] either in a pressure cooker or stove top and mash it . Keep it aside.
Take a pan . Heat it and add oil to it
Now add the onion and saute it till  it changes color
Then add the vegetables and saute for few minutes.
Add the tomatoes to it and saute till the tomatoes are all cooked  well
Now add the tamarind liquid without the pulp
Then add the Sambhar powder. Let the vegetable cook in that water.
When it is cooked add the mashed dhal and salt and add water if necessary
Allow it to boil for few minutes .
Seperately in a little pan add some oil , add mustard,hing, curryleaves.
When the mustard starts to pop add this to boiling sambhar and switch off the stove
Now Delicious Sambhar is ready
