Kadai Paneer

Paneer is a home made indian cheese. Paneer is used in many different ways in deserts,main dishes, gravies...
It is Kids favorite too.. Today we are going to make Kadai paneer with vegetables like Red capsicum,green capsicum,broccoli..

Ingredients
Paneer                       - 1 cup cubed
Red Capsicum           - 1 full ..sliced lengthwise
Green Capsicum        - 1 full...sliced lengthwise
Broccoli                     -1 cup
Onion                        1/2 chopped
Tomato                     -1 and 1/2 chopped
Ginger paste              -1 tsp
Garlic paste               -1 tsp
Redchilly powder      -1/2 tsp[depending on your spice prefernce]
Coriander powder     -1 tsp
Garam masala           -1/4 tsp
oil                             - 1-2 tsp
Coriander leaves for garnishing


Now to the cooking
Take a pan and heat it ..add 1/2 tsp oil.
Then add the paneer cubes and cook till light golden color .
Then remove it and add it to  boiling water for a minute and drain.
This will help the paneer to be soft.Keep it aside

Now take a Kadai and heat it.
Add oil to it and when it is hot add the onions and saute it .
Then add the ginger paste and garlic paste and saute for few minutes.
Add the capsicum both red and green and fry for few more minutes.
Take care not to overcook it as we need the crunchiness..
Add the boiled broccoli and tomatoes to it.
Next add the redchilly powder,coriander powder and garam masala,salt and mix.
Now add the paneer to it and cook for few more minutes
Delicious kadai paneer is now ready to eat
Garnish with finely chopped coriander and serve with roti

[When broccoli is boiled , it cooks fast and dish is done in few minutes]
