Tomato Rice



          When it come to rice we can make many types like Lemon rice, pudhina rice ,tomato rice , curd rice , Biriyani and many more. This tomato rice is easy to make and you just need raita/ appalam/ vathal.

Rice             - 3 cups ( cooked)
Tomatoes    - 3/4 cup chopped(approx. 4 tomatoes)
tomato paste- 2 tsps (optional)
{If you want add the tomato paste as it gives color , if not don't worry just increase the quantity of chopped tomatoes to 1 cup}
onion          - 1/4 cup chopped
curry leaves
Ginger, garlic paste - 1 tsp
red chilli powder     - 1/2 tsp
cashews                   - few
mustard                   -1/2 tsp
Channa dhal            - 1 tsp
cumin                      - 1/4 tsp
Pepper                     - 1/4 tsp
turmeric powder     -1/4 tsp
coriander finely chopped
oil                           - 2tsp
salt
               
Now take a kadai and heat it. Add oil to it and when hot add the seasoning mustard, channa, cumin, pepper and then cashews.
After the chana dhal is little golden add the onion and saute. Add salt to it.
Then add the ginger garlic paste and saute till the raw smell goes.
Add the tomatoes,and tomato paste , red chilli powder, turmeric powderand let it cook.
When all the tomatoes are mashed up add the rice and mix well and add salt if you need more.
Keep in mind not to break the rice and avoid stirring too much.
Add the curry leaves to it and mix .
Then remove from the stove and garnish with coriander and serve hot with raita / appalam/vathal
