Ragi Idli with Ragi flour and Idli Rava

 Idlis are considered a healthier breakfast as far as in my opinion. This is healthier too as it has Ragi flour
    Before going to the recipe I wanted to let you all friends know about the nutrients and health benefits of Ragi flour. Ragi flour is otherwise called a Finger Millet. Wow, it is Gluten free too.
Let's go to the health benefits of Ragi flour
 Few Health Benefits

  • Ragi Flour/ Finger Millet is an excellent source of calcium that helps to strengthen the bones.
  • It has Phytates, Polyphenols, and tannis which acts as an antioxidant.
  • Its phytochemicals help in slowing the digestion process. This in turn helps in controlling blood sugar levels in Diabetes
  • It is a very good source of Iron and regularly taken it helps in the recovery of Anemia.
  • It is gluten-free
These were few. Now let's go to the recipe.
Ingredients
Urad Dhal   - 1 cup
Idli Rava     -2 cups
Ragi Flour   - 2 cups
Salt              - 2 tsp

 Soak the Urad dhal and Idli Rava separately for 3-4 hours.
 After 3-4 hours, take a mixie and grind separately. Urad dhal ground to smooth texture. Idli Rava can be a very smooth texture or a little smoother.
Now mix the Ragi flour in water and add it. Then mix everything with salt to a consistency of Idli Dough( neither thick nor thin)
Allow it to ferment for 8-10 hours. After 8 hours it would have doubled in size. 
Switch on the Stove. Take the Idli Pan and add enough water to it and heat it.
Grease the Idli plates with little oil and pour the dough into the plates and place it in the Pan to cook/steam
In just about 15-20 minutes you could smell the aroma of Idli. Switch off the flames and take the plates out. Allow it to cool a little bit maybe 4-5 minutes. Then take the Fluffy yummy Ragi Idlis out with a spoon.
Serve it with your favorite delicious Sambhar and chutney or Podi
