This Minestrone Soup is a wholesome meal, in one Pot which is very fulfilling by itself.
In this recipe I added pasta. We can make it without pasta and adding potatoes to make it as full Vegetable Soup with Beans.
Prep Time - 15 min Servings - 4 servings

Total Time - 35 min
Onion - 1/2 cup chopped
Garlic - 3 cloves chopped finely
Carrot - 1 chopped
Celery - 1 stalk chopped
Zucchini - 1 diced
Kale - 1 cup chopped
Cannellini Beans - 1/2 cup cooked ( or 1/2 cup canned with water drained)
Kidney Beans - 1/2 cup cooked ( if using can drain it and use 1/2 cup)
Tomato - 1 can ( I used the diced 14.5 oz)
Tomato paste/sauce- 5 tbsp ( i used the pasta sauce)
Pasta - 1/2 cup
Bay Leaf - 1
Black Pepper - little around 1/4 tsp (as to your taste if you want spicy add more) Optional
water - 3-4 cup
Basil - 2 tsp (dried)
Thyme - 1 tsp ( dried)
Parsley - optional
Olive oil - 2 tsp
Take the Instant Pot .
Plug it in and press the sauté mode.
Add oil, then add the bay leaf.
Add the onion and sauté it.
Then add the celery, carrot, garlic ,zucchini and stir it for a minute or so.
Now add the uncooked pasta and then Kale , mix it.
After that add the beans and mix it. Add the basil, thyme , mix and add salt to it.
Now its time for pasta sauce to it( if you don't want to add pasta sauce you can add tomato paste around 2 tsp)
Add the tomato to it ( 14.5 oz) and add 3-4 cups of water.
Cancel the sauté mode and then close the lid of the Instant Pot.
Press the Pressure mode and choose either vegetable /Beans mode.
If you chose vegetable mode ,choose the temperature high and time for 20 minutes.
If you chose the Beans Mode, just set the timer to 20 minutes.
After 20 minutes , yummy delicious Minestrone Soup is ready.
Enjoy the delicious soup with a slice of Bread or just like that.
