Manjal Poosanikkai Sambhar in Instant Pot

 Today I am going to make Sambhar with Manjal Poosanikkai . Call it a Pumpkin in English. It is a squash and orange in inside. It is large ,round, orange vegetable(squash). This sambhar is very tasty and goes well as a side dish for Rice/ Idli/dosa.

Ingredients
Thuvar Dhal  -1/2 cup
Manjal Poosanikkai/Pumpkin     -1 cup
Onion          -1/4 cup chopped
Tomato       -2 small one(or 1 medium)
Tamarind     -small gooseberry size
Oil              - 1-2 tsps
Salt
Sambhar powder-1 tsp (depending upon how spicy you need you can increase or reduce the quantity. Mine is homemade and its spicy ,so I use 1/2 tsp)

Seasoning
Mustard   -1/4 tsp
Hing         - little (a pinch) ( optional)
Curryleaves    few

Cook the Thuvar dhal [Pigeon peas] either in a pressure cooker or stove top and mash it . Keep it aside.

Take the Instant Pot .
Switch it on and put it in a sauté mode.
Add oil to it
Add the seasoning of Mustard , hing , curry leaves.
Now add the onion and sauté it till  it changes color
Add the tomatoes to it and sauté till the tomatoes for few minutes
Add the salt, turmeric , sambhar powder and sauté
Then add the Manjal Poosanikkai/Pumpkin and sauté for few minutes.
Now add the tamarind liquid without the pulp
Add the mashed dhal and salt and add water if necessary
Check for salt and then cancel the sauté mode
Close the lid.
Put it in Pressure mode for vegetables and temperature high which sets it to 12 minutes.
After 12 minutes   the cooking is done . Leave it in warm mode and  the pressure release automatically after a few minutes
 Delicious Sambhar is ready.😀😋😋😋
Enjoy it with steamed hot rice /Idly/Dosa
