Pav Bhaji

 Pav Bhaji is fast food dish . It is a North Indian dish. It is just thick vegetarian gravy served with Pav/Hamburger bun/Bread. This can be served as lunch/snack/dinner.

It is simple and easy to make . I say it in simple words as Bhaji with Bread. My Kids eat it as a Sandwich. Fill the Bhaji in between 2 breads, add butter, chopped onion, drizzle of lemon and eat it.

Here this recipe serve 4 people


Potatoes - 4 medium

cauliflower- 1 cup

carrot- 1-2

Green Bell pepper- 1 chopped

Peas- 1/2 cup(I took the frozen sweet peas)

onion- 1 big one chopped finely

tomato-2-3 chopped

ginger paste-1/2 tsp

garlic paste-1/2 tsp

cilantro(optional)

oil-4 tsp

Pav Bhaji powder - 2tsp

salt as needed

Butter-2tbsp (optional)

For Serving

Pav Bread/Hamburger Bun- 4-6

onion-chopped finely

Lemon- cut into eighths/fourths

Wash the vegetables , chop it and keep it separately .Peel the Potatoes and chop it

Now take the Instant Pot add the chopped Potatoes, cauliflower, carrot and add enough water to cover the vegetables . Close the lid and pressure cook in the vegetable mode, heat -medium and for 14 minutes.

After its done , when the pressure is released , drain the water and mash the vegetables.

Switch on the stove. Take a pan and heat it.

Add 1/2 tbsp butter( adding butter is optional) , 4tsp oil to it and then when it is hot add the chopped onions, sauté it. After 2-3 minutes add the ginger, garlic paste to it and mix . Then add the turmeric, pav bhaji powder and mix it.

After few minutes of mixing add the chopped bell pepper/capsicum in it and sauté for another few minutes.  Add the tomatoes too. Add more pav bhaji powder if needed. 

Add salt to it too and keep on mixing it.

When the tomatoes are cooked nicely and also the bell pepper, add the mashed vegetable to it . Mix it well and cook for few minutes while stirring in the middle.

Mix it well in a way that the masala blends in nicely with mashed vegetables. Now add the peas to it and mix it for few minutes. 

We can see the Bhaji will come together as like a subzi . Put a tbsp butter on top and take it off the stove{adding butter is completely optional}

Now delicious Bhaji for the Pav is ready  Take a Tava and put 1/2 tsp of butter . Add the Pav and toast it on the tava.

Remove it and serve it with Bhaji on the side with chopped onions and   lemon
