If you want something other than urad dhal in your Dosa/Kuzhipaniaram, NO Problem. Instead, we can use Black Channa/ Black Chickpea (it is Brown though. I don't know why they call it Black Channa 😉🤔). It is very healthy and filled with proteins
Black Channa {Black Chickpea}- 1 cup
Rice - 3 cups
fenugreek - 1 tsp
salt - 2 tsp
oil for making the Kuzhipaniaram
Seasoning
Onion - 1/2 cup chopped finely
mustard- 1/2 tsp
Urad- 1/2 tsp
oil - 2 tsp
curry leaves few - optional
coriander - optional
Soak the rice and black channa for 6-8 hours
Add the fenugreek too
After 6-8 hours of soaking, grind it to a smooth or slightly rough consistency.
Add salt and let it ferment for 8 hours or overnight.
Now let's make the seasoning to be mixed in the dough before making Kuzhipaniaram
Heat a pan
Add oil- 2tsp. When hot add the mustard and urad, and when it pops add the onion, and curry leaves.
Mix it for a minute to 2 minutes and then add that to the dough and mix. Keep it ready to make Kuzhipaniaram
Now take the Kuzhipaniaram pan and heat it on the medium.
Add little oil to each Kuzhipaniaram space.
When the pan is hot add the dough in each Kuzhipaniaram space and cook til it browns and little crispy on one side flip it with a Kuzhipaniaram stick or we can use a fork too
Cook till the other side also browns. Make sure the flames are in medium.
After it is done take it out and serve it with hot Sambhar and Chutney
Tips: Adding 1/2 tsp ENO is optional to the dough when you are mixing the seasoning.
