Black Eyed Peas Curry (Instant Pot)
A hearty, protein-packed curry that’s comforting, flavorful, and incredibly easy to make!
This wholesome curry made with black-eyed peas is a delicious and nutritious dish that pairs perfectly with rice or roti. Packed with plant-based protein, aromatic spices, and a rich tomato base, it’s a simple yet satisfying recipe—especially when you're short on time but craving something warm and home-cooked. And the best part? It all comes together in the Instant Pot with minimal effort!
Ingredients:

Black-eyed peas – 1 cup (soaked overnight or for at least 6–8 hours)

Onion – 1, finely chopped

Tomatoes – 2 to 3, chopped

Garlic – 2 to 3 cloves, minced

Curry leaves – A few (optional but recommended)

Cumin seeds – 1 tsp
-
Asafoetida (Hing) – 1/4 tsp
-
Turmeric powder – 1/4 tsp
-
Coriander powder – 1 tsp
-
Curry masala powder – 1 1/2 tsp (adjust to taste)

Salt – 1 tsp (or to taste)

Oil – 2 tsp

Water – 2 cups
Instructions:

Set the Instant Pot to Sauté mode.
Add oil. Once hot, add cumin seeds and asafoetida. Let them splutter for a few seconds. -
Add the chopped onions and sauté until they turn soft and translucent.

Stir in the garlic and sauté for a minute, followed by chopped tomatoes and curry leaves. Cook until the tomatoes soften.

Add the dry spices: turmeric, curry masala powder, coriander powder, and salt. Mix well and sauté for another 2–3 minutes.

Add the soaked black-eyed peas and 2 cups of water. Give it a good stir.

Cancel Sauté mode.
Secure the lid and set the Instant Pot to Pressure Cook (or Beans/Chili mode) on High Pressure for 30 minutes. -
Once the timer is up, the Instant Pot will switch to Keep Warm mode.
Allow the pressure to release naturally for best results. -
Open the lid, give it a gentle stir, and serve hot with steamed rice or warm roti.
Tips:

For extra flavor, garnish with chopped cilantro and a squeeze of lemon juice.

You can add a green chili while sautéing for more heat.

If using canned black-eyed peas, reduce cooking time to 10-15 minutes on High Pressure.
