Masala Pori (Spicy Puffed Rice Snack)

Ingredients

Puffed Rice – 2 cups

Crispy Rice Cereal – 2 cups

Ginger – 1-inch piece, crushed

Garlic – 2–3 cloves, crushed

Boondhi – 1 cup

Pottukadalai / Roasted Gram (Split Roasted Chickpeas) – ¼ cup

Peanuts – a handful, roasted in a little oil

Curry Leaves – a few, roasted in oil until crisp

Turmeric Powder – to taste

Chilli Powder – to taste

Curry Powder – to taste

Salt – to taste

Oil – 2–3 teaspoons (as needed)
Instructions

Prepare the Spice Mix
Heat a large pan on medium flame. Add 2–3 teaspoons of oil. Once warm, add crushed ginger and garlic, and sauté for a few seconds until aromatic.
Then, add turmeric, chili powder, curry powder, and salt based on your spice preference. Stir quickly to avoid burning. -
Roast the Puffed Rice
Add the puffed rice to the pan and stir continuously for 2–3 minutes. Roast until it becomes crisp. You’ll know it’s done when it crushes easily between your fingers.
Transfer to a large mixing bowl. -
Roast the Crispy Rice Cereal
In the same pan, lightly roast the crispy rice cereal for 1–2 minutes until it feels crunchy and toasted. Add it to the bowl with puffed rice. -
Add Boondhi
Quickly toss in the boondhi and roast for a minute or two, just to warm it up. Add to the puffed rice mixture. -
Add Roasted Ingredients
Now add roasted peanuts and crispy curry leaves to the mix. Also, toss in the pottukadalai (roasted gram). -
Mix Well
Gently toss everything together until well combined and evenly coated with the masala. -
Cool and Store
Let the mixture cool completely. Store in an airtight container for up to a week — though it probably won’t last that long because it’s so tasty!
