Mediterranean Foccacia with Kalamatta Olives

🍞 Mediterranean Magic Focaccia — Fluffy, Flavor-Packed, and Irresistible!

If you love bold flavors and bakery-style bread at home, this Mediterranean Magic Focaccia is going to be your new favorite! Soft, airy, and beautifully golden, this focaccia is infused with garlic, oregano, creamy feta, tangy kalamata olives, and sweet red onion.
It’s the perfect bread for snacking, dipping, or serving alongside soups and pastas—simple to make, but big on flavor.

✨ Ingredients

For the Dough

  • All-purpose flour/Wheat Flour – 3 cups

  • Instant yeast – 1 packet (2 ¼ tsp)

  • Warm water – 1 cup

  • Sugar – 2 tsp

  • Garlic powder – 1 ½ tsp

  • Salt – ½ tsp (adjust to taste)

  • Olive oil – ⅓ cup

  • Feta cheese – ½ cup, crumbled

  • Oregano leaves – 1 tsp

For the Topping

  • Kalamata olives – ⅓ cup

  • Red onion – a few thin rings

  • Feta cheese – a sprinkle

  • Olive oil – 1–2 tsp for brushing

🥣 Instructions

1. Activate the Yeast

  1. In a bowl, add sugar and yeast.

  2. Pour in the warm water and mix until smooth.

  3. Let it rest for a few minutes until the mixture becomes foamy.

2. Prepare the Dough

  1. In a stand mixer on low–medium speed, add:

    • Flour

    • Garlic powder

    • Salt

    • Feta cheese

    • Oregano

  2. Slowly pour in the yeast mixture while the mixer is running.

  3. Add the olive oil, and continue mixing until a soft dough forms.

  4. Add a little extra water if needed.

3. First Rise

  1. Coat the dough lightly with oil.

  2. Cover and let it rest for 15–30 minutes until it puffs up.

4. Shape the Focaccia

  1. Once doubled, transfer to a floured surface.

  2. Punch it down and roll it out with a rolling pin.

  3. Grease a baking dish with 1 tsp olive oil.

  4. Place the dough inside and gently stretch it to fit.

  5. Use your fingers to make small dimples all over the surface.

5. Add Toppings & Second Rise

  1. Press in the kalamata olives and red onion rings.

  2. Sprinkle a little extra feta on top.

  3. Brush the surface lightly with olive oil.

  4. Let it rise again for 30 minutes.

6. Bake

  1. Preheat oven to 425°F (220°C).

  2. Bake the focaccia for 20–30 minutes, or until golden brown.

7. Serve
