Easy Tomato Bruschetta

Today we’re making a classic Tomato Bruschetta, and trust me—this one is as simple as it gets. Fresh, flavorful, and perfect for busy days! I had a can of diced tomatoes already packed with basil, garlic, and oregano, so I used it to save time while still keeping that fresh homemade taste. This shortcut bruschetta comes together in minutes and tastes amazing on crispy toasted bread.

Ingredients

  • Diced tomatoes with garlic, basil, and oregano – 1 can (14.5 oz)

  • Roma tomatoes – 4, finely chopped

  • Olive oil – 2 tbsp

  • Balsamic vinegar – 1 tbsp

  • Italian seasoning – 1 tbsp

  • Salt – to taste

  • Black pepper – to taste

  • Parmesan cheese – ½ cup (a mix of grated and finely grated)

Instructions

  1. In a mixing bowl, add the canned diced tomatoes and chopped Roma tomatoes.

  2. Drizzle in the olive oil and balsamic vinegar.

  3. Sprinkle in Italian seasoning, salt, and black pepper.

  4. Add the Parmesan cheese and mix everything well until combined.

  5. Let it rest for a few minutes so the flavors come together.

To Serve

  • Toast your bread until golden and crispy (with or without cheese).

  • Spoon the bruschetta mixture generously on top.

  • Serve immediately and enjoy—simple, fresh, and absolutely delicious!
