tomato - 1 medium chopped

tofu, pressed, drained, and crumbled - 1 block

1/4 cup frozen peas (optional) - 1/4 cup

turmeric powder - 1/4 tsp

curry powder - 1 tsp

Salt, to taste

oil - 2 tsp

mustard seeds - 1/4 tsp

asafoetida (hing) - 1/4 tsp
Instructions

Press and prepare the tofu
Remove the tofu from the package and drain the excess water. Wrap it in a clean cloth or paper towel and on a plate and place a weight on top (like a heavy pan) to press it for about 20 minutes. This helps remove extra moisture and improves texture. Once pressed, crumble the tofu using a fork and set aside. -
Make the tempering
Heat oil in a pan over medium heat. Once hot, add mustard seeds and let them splutter. Then add asafoetida. -
Sauté the base
Add chopped onions and sauté until they turn soft and slightly translucent. Stir in the chopped garlic and cook for a minute until fragrant. -
Add tomatoes and spices
Add the chopped tomatoes and cook until they soften. Then add turmeric powder, curry powder, and salt. Mix well. -
Cook the tofu
Add the crumbled tofu and mix gently so the spices coat it evenly. Cook for about 8–10 minutes, stirring occasionally, until the tofu is heated through and develops light golden spots. -
Finish with peas
Add the frozen peas (if using), mix, and cook for another 3–5 minutes.
Serving Suggestion
