Ingredients

  • 1 cup cooked chickpeas- 1 cup
  •  small red onion, sliced - 1
  • cucumber, sliced - 1
  • tomatoes, sliced or chopped - 1–2 
  • bell pepper, chopped (orange bell pepper adds a beautiful color and sweetness)-1
  • Olives, sliced
  • Feta cheese, crumbled
  • Juice of 1 lemon
  • Fresh mint, chopped
  • Fresh coriander (cilantro), chopped
  • 1–2 tbsp olive oil
  • Black pepper, to taste
  • Pink salt, to taste
  • Italian seasoning (optional)

Instructions

  1. In a large salad bowl, add the cooked chickpeas.
  2. Add the sliced red onion, cucumber, tomatoes, bell pepper, and olives.
  3. Add the chopped mint and coriander, then gently toss everything together until well combined.
  4. Drizzle olive oil over the salad and squeeze in the fresh lemon juice.
  5. Season with pink salt, black pepper, and Italian seasoning if using.
  6. Sprinkle the feta cheese on top and lightly mix again.
  7. Serve fresh and enjoy this vibrant Mediterranean-style salad!
