Chettinad Vazhakkai Masala (Raw Plantain Masala)

This Vazhakkai Masala is a traditional Chettinad-style side dish made with raw plantain, fragrant curry leaves, ginger, garlic, and spices. Chettinad Vazhakkai Masala (Raw Plantain Masala)
Ingredients
- Raw Plantain (Vazhakkai) – 1
- Oil – 3 tsp (1 tsp for marination + 2 tsp for cooking)
- Mustard Seeds – ½ tsp
- Urad Dal – ½ tsp
- Asafoetida (Hing) – a pinch
- Curry Leaves – a few
- Ginger – ½ inch, crushed
- Garlic – 1 clove, crushed
- Turmeric Powder – ½ tsp
- Curry Powder – 1 tsp
- Salt – as needed
- Water – 1 to 3 tbsp
Method
- Peel the raw plantain and chop it into small cubes.
- Transfer the chopped plantain to a bowl. Add turmeric powder, salt, and 1 teaspoon oil. Mix well until all the pieces are evenly coated.(optional)
- Heat 2 teaspoons oil in a pan.
- Add mustard seeds and allow them to splutter. Then add urad dal and asafoetida.
- Once the urad dal turns light golden, add the curry leaves, crushed ginger, and crushed garlic. Sauté for a few seconds until fragrant.
- Add the plantain pieces and curry powder, and mix well.
- Sprinkle 1–3 tablespoons of water, cover the pan, and cook on low to medium heat.
- Stir occasionally and cook for about 5–10 minutes, or until the plantain becomes tender and lightly crispy around the edges.
- Switch off the heat and serve hot.
Serving Suggestion
Serve this flavorful Chettinad Vazhakkai Masala with hot steamed rice, rasam, sambar, or curd rice for a comforting South Indian meal.
