Who knew a simple watermelon could be transformed into such a beautiful dessert? This Watermelon Halwa is a unique sweet treat with a gorgeous natural ruby-red color—no artificial colors needed! Soft, glossy, and melt-in-the-mouth, this halwa combines the refreshing flavor of watermelon with the richness of ghee and the aroma of cardamom. Perfect for festivals, special occasions, or whenever you're craving something different and delightful.

Ingredients

  • Watermelon – 1 cup (chopped)
  • Corn flour – ½ cup
  • Water – 1 cup

For the Sugar Syrup:

  • Sugar – 2 cups
  • Water – 2 cups
  • Lemon juice – ½ tsp

For Flavoring:

  • Cardamom powder – ⅛ tsp
  • Ghee – 6 tbsp (divided)

For Garnishing:

  • Cashews – a few, chopped
  • Almonds – a few, chopped

Method

  1. Chop the watermelon and blend it into a smooth puree.
  2. In a bowl, mix the corn flour with 1 cup of water until completely smooth and lump-free. Add the watermelon puree and mix well. Set aside.
  3. Heat a heavy-bottomed pan and add the sugar and 2 cups of water. Stir until the sugar dissolves completely.
  4. Add the lemon juice and mix well. This helps prevent the sugar syrup from crystallizing.
  5. Slowly pour in the watermelon-corn flour mixture, stirring continuously to avoid lumps.
  6. Cook over medium heat, stirring at regular intervals. After about 10 minutes, add:
    • 2 tbsp ghee
    • Cardamom powder
    • Chopped cashews and almonds
  7. Continue cooking and stirring. After a few minutes, add another 2 tbsp ghee.
  8. Add the remaining 2 tbsp ghee a few minutes later and keep stirring until the mixture becomes glossy, thick, and starts leaving the sides of the pan.
  9. This process typically takes about 20–30 minutes. The halwa is ready when it no longer sticks to the pan and has a shiny, translucent appearance.
  10. Transfer the halwa to a greased tray or dish and spread evenly.
  11. Refrigerate for about 30 minutes or until set.
  12. Cut into squares or desired shapes and serve.
