Method
Prepare the tofu:
Drain the tofu and place it on a plate. Cover it and place a heavy object on top to press out the excess water. Let it sit for about 15–20 minutes.Remove the tofu and cut it into cubes.
Season the tofu as desired. I used a little curry powder, salt, and corn flour and gently coated the tofu.
Cook the tofu:
Air fryer: Air fry at 400°F for 10–15 minutes, turning halfway through, until golden and crispy.
Pan-fry: Heat a little oil in a pan and fry until the tofu is golden and crisp.
{For today I deep fried the tofu}
Keep the crispy tofu ready.
Prepare the sauce:
In a bowl, mix soy sauce, maple syrup, rice vinegar, sesame oil, water, sesame seeds, garlic, and optional red chili flakes.Heat a cast-iron pan and add about 2 tsp oil.
Add the fried tofu and pour in the prepared sauce. Cover and cook for 4–5 minutes, stirring occasionally so the tofu gets evenly coated.
If you want a thicker sauce, mix 1 tbsp water with ½–1 tsp corn flour to make a slurry. Add it to the pan and stir until the sauce thickens.
Add the chopped scallions and sprinkle with sesame seeds. Turn off the heat.
